Well, Easter has come and gone, and now we’re left with two things: leftover candy…and leftover eggs! If your family is anything like mine, you bought 56489654312 eggs to dye this Easter, and now you’re stuck trying to figure out what to do with them! Many of ours are hard-boiled, but many are not, too. It’s the leftovers that are not hard-boiled that can be tricky for us…we could hard-boil them now, but we’re starting to get tired of them already.
So what do we do with all these leftovers? Well, fret no more. I’ve compiled a list of some eggs-celent recipes to help you use up all those leftover eggs of yours, and to enjoy doing it!
I tried not to give you too many breakfast recipes, because those are a little too on-the-nose. My goal was to share some recipes that will use up your leftover eggs whether you want to use them at breakfast, lunch, dinner, snack, or dessert! Some of these recipes do not directly call for eggs (like the caesar dip), but if you use the caesar dressing recipe I’ve included here, you’ll still use the eggs up!
